Gatco, Smith's and Lansky are all nearly the same product. They are all very similar. They all put a good edge, and all are great at what they do. But if you're really serious about putting on a perfect edge, the Edge Pro systems are unbeatable. Only my opinion, but they're not really THAT much more than the Gatcos and others.

Since we're talking about Edge Pros, what is the main difference between the Apex and the Pro? Just more stones? I looked at their site and noticed that the machine looked different, but couldn't figure out how it would be more useful.

As for the Lansky, I use it too. ALL of my Benchmades need either the 25 or 30 slot. First I try a quick light pass on 25 and then feel the edge to see if it made contact with it. If not, I got to the 30. I could use the sharpie method, but I can tell by feel if it is contacting the edge or not.

The pro will sharpen scissors and chisels and is more stable they say (I have the apex)

That's pretty much it DJ.

More metal and the scissor/chisel attachment.

Mr. Dale says you only need the Pro if you're going to sharpen knives pretty much full time.

While it takes practice I see, the Apex is an amazing tool. I took my 3500 yesterday and put a very decent polished edge on it moving from M to EF stones and while not perfect is a lot better than it was out of the box.

Took an old fixed blade in ATS-34 with a damaged tip and put a great edge on it, used for cutting veggies last night and does it cut!

Best part: a friend gave me a Chinese beater with 440 something steel and took it from butterknife dull to scary sharp in only an hour or so.

My biggest challenge so far is to figure out what angle to use on the individual knife...the 5300 came sharpened by someone not LifeSharp...

But everything else I've used at 24 degrees is VERY sharp.

One trick I've picked up is to rinse the stones regularly under the running sink and a green scotchbrite sponge works well to take the grit off. Also changing the blue tape helps...no swirls found so far at all.

I'm sold, just have to have someone gift me one! Wink Big Grin

Joe, to cut that time to a third, stay on the 120 stone until you're getting a distinct burr on both sides, then switch to the medium stone. Get the same burr, then strop and yer done. Polished edges don't give you that killer tooth that cuts so well. Smiler
