If you really want to go cheap and simple, buy a Spyderco SpyderPac (large size holds 30 knives). It's a nylon pack with individual clear plastic sleeves for the knives. Easy to hang it on the wall or fold it up for storage. Not as classy or pretty as the solutions posted here but it is quick, easy, and cheap.
