How do you know when a knife is sharp enough?

Sometimes I shave my left arm, but, if hair is getting sparce, I do the thumb test.

I keep a coffee can full of old bootlaces and paracord scraps by my workbench. When a blade cuts a piece of 550 paracord like the proverbial hot knife through butter, it's sharp enough for me.

I test shapness by cutting strips of type paper. About 8-1/2" x 3". I keep a stack of them near my desk. Once you get used to testing sharpness by cutting through type paper, you get so you can feel rough spots and places where the edge will "catch" a little when it shouldn't. Once you work all that out so that the blade will glide through, it will also shave.

when i can shave paper thin enough that it twists upon cutting it. this is beyond simply feeling no resistance in the paper. if it doesn't twist, it's touch up time.

When it won't slide of my fingernail at approx. 45 degree angle while being drawn or pushed with no downward pressure on the blade other than its own weight.

when i cut myself! i was working on a blade one night and just kept feeling that it wasn't quite "there". this was in my lansky days. so anyway, i proceeded to drop the blade and it cut right through my jeans and well into my leg. i stopped sharpening then

From years of use, I keep it simple. There is no test other than if it cuts well for my known day to day uses and holds it's edge, then I know I'm doing it right, or enough.
