Acetone or acetone-based lacquer thinner/nail polish remover will remove the ink w/ no harm--

Man, everyone is really over-thinking this! Sharpie is just a marker. The ink is easily removed with rubbing alcohol, and that didn't damage the old BT-2 coating, let along the new BK coating (it is CeraKote, after all).

Buy whatever coated knife you want, grab the rubbing alcohol and a q-tip/cotton ball/kleenex/paper towel/whatever, get it wet and rub the Sharpie ink off. I do this all the time when using the Sharpie trick when sharpening.
