It seems it all relys on how well you can hold the knife at the same angle in front of the grinder .........

Not more then EdgePro, once you get the hang of it. And once you get your edge where you want it there's no need to use the abrasive wheel, just polish it off on the slotted wheel and you're good to go.
I did re-profile my Kershaw Mini-Cyclone TiZDP took me about 2 minutes to get a mirror polished edge on it. I then took some few more passes on the slotted wheel loaded with white rouge and was able to cut arm hairs without touching the skin.
